Follow this simple home made afternoon tea recipe to make your own delicious vegan cupcakes!

Ingredients:
Chocolate Cupcake
- Dulce Shireen’s Indulgent chocolate cake mix (310 g)
- Any vegetable oil (60 ml) *We used Extra Virgin Olive Oil
- Plant Milk or Water (120 ml)
Frosting
- Nature’s Charm coconut whipped cream (400 ml) *Put in the fridge overnight or at least 4 hours
- Natnat organic coconut sugar (50 g)
Instructions:
- Preheat the oven to 325 ͒ F or 160 ͒ C. Prepare a cupcake pan with liners or just cupcake liners. I use reusable silicone liners.
- Empty the cake mix into a large bowl. And in oil and water to the mix, and beat on low speed for 30 seconds with a hand mixer. Mix until the batter is smooth – do not overmix! Pour into the cupcake liners.
- Bake for 12 minutes or until the toothpick comes out clean after inserting into the center. Cool for at least 10 minutes before removing it from the pan. Once the cupcakes are completely cool, decorate with frosting.
- While the cupcakes are being cooled, make the frosting.
- Pour coconut whipped cream into a large bowl, add in organic coconut sugar, beat on medium speed until the cream becomes the right consistency for the frosting – thick and creamy, not watery.
- Decorate the cooled cupcakes with frosting and fruits or chocolate chips / grated chocolate from Conspiracy Chocolate is totally vegan.
- Enjoy the cupcakes with your favorite tea or coffee.
